Black Cod with Herb-Packed White Wine Sauce

This dish is simple and elegant. Beautiful Seremoni Grade Black Cod fillets and a bright, herby, garlicky white wine sauce to go with it. The fish is top-notch quality, and the sauce is a go-to for just about any type of seafood imaginable. This is a restaurant-quality dinner you can make at home in about half an hour.
Ingredients
- 4 fillets Seremoni Grade Black Cod
- Olive oil, for prepping and for cooking
- Juice of 1 lemon
- 3 cloves garlic, thinly sliced
- 1/4 cup capers
- 1 handful chives, finely sliced
- 1 handful parsley, finely chopped
- 1 handful dill, finely chopped
- 4 oz. Salted butter
- 1 cup nonaromatic, medium weight white wine
- Kosher salt, for seasoning and for cooking
Preheat your oven to 300°F.
Place your fillets skin side down on a foil-lined baking sheet and season lightly with salt. Drizzle with olive oil and rub to evenly coat all sides of the fillet. Bake in the oven for 15 minutes.
In a medium saucepan, heat olive oil (enough to cover the bottom of the pan) over medium-high heat. Add in your garlic and capers and saute.
When the garlic and capers start to brown and stick to the bottom of the pan, deglaze with white wine. Bring it to a boil then add in the lemon juice.
Turn your heat down to medium-low, add in the butter, and stir. While stirring, add in two pinches of kosher salt. Continue to stir until the butter is melted, then add in the herbs, and turn off the heat.
After 15 minutes, check your fish for doneness. You want it to flake apart when touched with a fork.
To serve, pour a bit of sauce down first, then place your fish on top. Finish with sauce and enjoy.
