Vermilion Rockfish Crudo with Dumpling Daughter

This fresh crudo highlights the clean flavor and delicate texture of Seremoni Grade Vermilion Rockfish. Dumpling Daughter’s Ginger Soy adds savory depth while quick-pickled daikon bring crunch and acidity to every bite. This vibrant dish lets the quality of the fish shine, perfect as an elegant appetizer or for sharing.

Ingredients

  • 1 skin-off fillet Seremoni Grade Vermilion Rockfish
  • 1 inch thick piece daikon radish, thinly sliced
  • 2 Tbsp seasoned rice vinegar, or enough to just cover the daikon
  • 1⁄3 jalapeno, very thinly sliced
  • 1 Tbsp Dumpling Daughter Ginger Soy, or more to taste
  • 1⁄2 tsp sesame oil
  • Lemon juice to taste

    Instructions

  • Thinly slice daikon radish using either a mandolin or a sharp knife. Place sliced radish in a small bowl and cover with rice vinegar for a quick pickle. Set aside.

  • Slice rockfish into 1⁄4 inch pieces, against the natural grain of the fish.

  • To assemble, place fish on a rimmed plate. Add pickled daikon and jalapeno slices. Drizzle ginger soy sauce, sesame oil, and a generous squeeze of lemon over the entire dish.
